Blender Pancakes

My friend Rana shared this recipe with me when we lived in DC.  I love the hearty, nutty flavor yet soft and light texture of these pancakes.  They are 100% whole wheat.

1 c milk
3/4 c wheat kernels (not wheat flour, but the wheat itself)
2 Tbsp sugar
1/4 tsp salt
1 tsp baking soda
2 tsp baking powder
2 eggs
1/2 c oil (will work with half the oil, so try 1/4 c and see what you prefer)


Put milk and wheat in blender.  Blend for 4 minutes, starting on low and working up to high. Add rest of ingredients and blend until mixed.  Cook as regular pancakes.
