My friend Rana shared this recipe with me when we lived in DC. I love the hearty, nutty flavor yet soft and light texture of these pancakes. They are 100% whole wheat.
1 c milk
3/4 c wheat kernels (not wheat flour, but the wheat itself)
2 Tbsp sugar
1/4 tsp salt
1 tsp baking soda
2 tsp baking powder
2 eggs
1/2 c oil (will work with half the oil, so try 1/4 c and see what you prefer)
Put milk and wheat in blender. Blend for 4 minutes, starting on low and working up to high. Add rest of ingredients and blend until mixed. Cook as regular pancakes.
I've wanted to try these ever since you told me about that. Thanks for posting the recipe, Sarah! I'm excited to give them a go at our house.
ReplyDeleteThese are phenomenal! I love that they just use the kernels! That is great!! Totally going to try them tomorrow morning.
